Vineyard and terroir
The wine comes from a careful selection of fully ripe grapes grown around San Gimignano. Its mineral character is linked to soils that were once beneath the sea and remain rich in marine fossils.

Vinification
The hand-harvested grapes undergo approximately four days of skin maceration at low temperature, broadening the aromatic profile and producing a slightly deeper colour. Gentle pressing follows, after which the must ferments in stainless-steel tanks.
Ageing
The wine matures on its fine lees for approximately one year, gaining structure, balance and complexity.
Tasting profile
Straw yellow with golden highlights. The nose is intense and enveloping, with citrus and mineral notes. Elegant and structured on the palate, it combines saline, iodine-like nuances with pronounced freshness and a persistent finish.
Serving and pairing
Serve at 12–14°C. Pair with fish-based first courses, shellfish, salmon, white meats and medium-aged cheeses. Suggested dishes from Ristorante Da Pode are Fusilli allo zafferano and Zuppetta di fagioli e porcini.
