Grapes
A selection of the finest grapes, with Sangiovese defining the wine’s character. The precise percentage and any supporting varieties are not specified.
Vinification
The grapes are harvested manually. A 48-hour cold maceration at 8–10°C gently extracts aroma and colour. Fermentation follows with approximately 15 days of skin contact, building structure and depth.
Ageing
The wine matures in wooden casks for approximately one year. During this period it develops fine tannins, elegance and a harmonious spicy dimension.
Tasting profile
Deep ruby red. The broad, elegant nose combines blackberry, morello cherry and plum with delicate spice. Fresh and full-bodied on the palate, it has substantial structure, fine, polished tannins and a persistent finish.
Serving and pairing
Serve at 18–20°C. Pair with grilled or barbecued red meats, game, slow-cooked dishes, stews, rich braises and mature cheeses. Recommended dishes from Ristorante Da Pode are Cinghiale in umido, Peposo and Controfiletto al tartufo.
