Vineyard and terroir
The wine is made from fruit grown in the estate's vineyards around Tenuta Sovestro in San Gimignano.
Vinification
The grapes are harvested by hand and gently pressed as soon as they reach the cellar, preserving delicacy and primary aromas. A light static clarification precedes fermentation in stainless-steel tanks at 14°C.
Ageing
The rosato ages on its lees in stainless steel until bottling.
Tasting profile
Bright, pale pastel pink. The nose is fresh and citrus-led, with small red-fruit notes including strawberry. Light, savoury and dry on the palate, with pronounced freshness and an easy-drinking character.
Serving and pairing
Serve at 8–10°C. Pair with traditional Tuscan cured meats such as Cinta Senese, grilled vegetables, light fried dishes, summer snacks or an aperitivo; it may also be enjoyed on its own. Suggested estate-restaurant dishes include mixed Cinta Senese salumi, tagliatelle with porcini mushrooms and mixed cheeses.

Conceived as the estate's carefree rosato, Il Rosato della Via Vecchia is styled as light, lively, dynamic and playful, suited to informal occasions and summer aperitivi.
