Vineyard and terroir
The wine is made from grapes grown on the land surrounding Tenuta Sovestro in San Gimignano and is produced in limited quantities.
Vinification
The grapes are picked during the first week of September and hung on mats to dry naturally until mid-November, concentrating sugar and aroma. After pressing, the must is clarified through static decantation for approximately 24 hours.
Ageing
Fermentation and maturation take place in small 50–100 L caratelli and continue there until bottling, contributing roundness and persistence.
Tasting profile
Orange shading toward gold. Aromas of yellow-fleshed fruit and honey lead to a round, persistent palate.
Serving and pairing
Serve at 12°C with traditional Tuscan desserts. The estate specifically recommends Lucia's cantucci.

Vino dei Frati is presented as an artisanal Tuscan passito inspired by the estate's monastic tradition and shaped by the extended natural drying of its grapes.
