Vineyard and terroir
The fruit comes from the estate's vineyards around Tenuta Sovestro in San Gimignano. Ximon is one of the estate's small-production wines, made in fewer than 1,000 bottles.
Vinification
Grapes picked at full ripeness undergo 12 hours of cryomaceration at 8°C to extract colour and fruit aromas gently. Gentle pressing is followed by 48 hours of static gravity clarification. The clear must ferments in stainless steel at a controlled 16°C.
Ageing
The wine remains in stainless steel until bottling, retaining its direct fruit character, freshness and persistence.
Tasting profile
Straw yellow with green highlights. The gentle nose combines citrus, peach, elderflower and musk. The palate is fruity, savoury and fresh, with moderate acidity and good persistence.
Serving and pairing
Serve at 12–14°C. Suitable as a refreshing aperitivo and with antipasti, lightly dressed pasta, soups, risottos, fish dishes and medium-aged cheeses. Suggested estate-restaurant dishes include gnocchi with walnut and truffle, Bocconcini di Pollo alla vecchia maniera and Tagliata di porcini.

Ximon was conceived by Sergio of Tenuta Sovestro, reflecting his preference for expressive, fruit-driven white wines. It was created as a characterful Tuscan alternative to more conventional white-wine styles.
