Vineyard and terroir

The grapes come from Speri-owned vineyards in the heart of Valpolicella Classica, in San Pietro in Cariano, Fumane and Negrar. Sites range from 120 to 350 m above sea level and are trained to the Verona pergola system.

70% Corvina Veronese, 20% Rondinella and 10% Molinara and other indigenous varieties.

Vinification

The ripasso method is deliberately applied more restrictively than required: Valpolicella Classico is passed only once over Amarone pomace, using equal quantities of wine and pomace.

For the 2020 vintage, the grapes were harvested by hand from 21 September to 5 October and immediately crushed and destemmed. Maceration lasted eight days in stainless-steel tanks at 20–24°C. Alcoholic and malolactic fermentation were completed after transfer to glass-lined cement. At the end of February, the Valpolicella underwent an 11-day second fermentation on Amarone pomace at 18°C, after which alcoholic fermentation was completed in glass-lined cement.

Ageing

The wine matures for 12 months in 20 hl Slavonian oak barrels. The main wine page specifies a further six months in bottle.

Technical data

The 2020 wine has 13.5% alcohol, 3.7 g/L residual sugar, 5.0 g/L total acidity and 0.46 g/L volatile acidity. Formats are 750 ml and 1500 ml.

Tasting profile

Deep, intense ruby red. Red fruit, spices and cocoa shape the aroma. The palate is warm and smooth, with rounded tannins providing balance; fruit and spice are supported by fresh acidity.
