Questo vino
Vineyard and terroir
The grapes come from Speri family estates in the heart of Valpolicella Classica, within the municipalities of San Pietro in Cariano, Fumane and Negrar. The vineyards lie at 120–350 m above sea level and are trained using the Verona pergola system.
Grapes
60% Corvina Veronese, 30% Rondinella and 10% Molinara.
Vinification
For the 2021 vintage, the grapes were harvested by hand between 20 September and 2 October, then immediately crushed and destemmed. Skin maceration took place in stainless-steel tanks at a controlled temperature of 20°C. The wine was transferred to glass-lined cement tanks to complete alcoholic and malolactic fermentation. It was filtered and bottled in January 2022.
Ageing
Maturation lasts four months in stainless steel and glass-lined cement, followed by further maturation in bottle.
Technical data
The 2021 wine has 12.5% alcohol, 3.0 g/L residual sugar, 5.1 g/L total acidity and 0.33 g/L volatile acidity. Formats are 375 ml and 750 ml.
