Vineyard and terroir
The wine comes from 8 ha of vineyards in the Assisi DOP area, within the wine-growing districts of Assisi and Spello, at approximately 400 m above sea level. The vines average about 18 years of age. The soils are shallow and rich in skeletal material. Two geological descriptions are provided: limestone associated with Monte Subasio and, in the technical sheet, porous and permeable skeletal material created by the weathering of marine sandstone in a medium-textured, sandy soil.
Grapes
50% Sangiovese, 30% Merlot and 20% Cabernet Sauvignon. Merlot and Cabernet Sauvignon contribute softness and ease of drinking to the Sangiovese-based blend.
Vinification
Harvest takes place in September, beginning with Merlot in the first part of the month, followed by Cabernet Sauvignon and finally Sangiovese. The grapes are destemmed immediately. Each variety is vinified separately to encourage its individual characteristics to develop fully. Fermentation takes place in temperature-controlled stainless-steel fermenters, with approximately 10–15 days of maceration, regular pump-overs and délestage. Malolactic fermentation is monitored and completed in stainless steel.
Ageing
The wine matures for several months in second-use French oak barriques, followed by approximately six months in bottle.

Tasting profile
Ruby red with purple highlights. The fresh aromatic profile combines cherry and raspberry fruit with sweet spices and chocolate. The palate is soft and well structured, with savoury tannins and a complex finish.
Label / history
The Assisi DOC was established in 1997, confirming the viticultural vocation of an area previously known primarily for extra-virgin olive oil. Assisi Rosso is Sportoletti’s most-produced wine and is presented as a versatile expression of the denomination.
