Vineyard and terroir
The Grechetto comes from vineyards in the Spello district, within the Assisi DOC zone, at approximately 400 metres above sea level. The shallow, medium-textured red soil is rich in calcium carbonate and contains abundant skeletal material formed through the dissolution of Monte Subasio limestone. The vineyards are spur-pruned cordon at a density of 5,000 vines per hectare. Vine age is given as 15 years in the main description and 18 years in the technical sheet.
Grapes
100% Grechetto.
Vinification
The main description places harvest in mid-September, when the Grechetto is slightly riper than usual; the technical sheet instead gives late August to the first days of September. After harvest, the grapes dry for approximately two months in small crates in a temperature-controlled environment. The technical sheet also specifies controlled humidity. Drying continues until the desired sugar concentration is achieved.
The dried grapes are pressed and remain in contact with their skins for approximately six hours at 4°C. Alcoholic fermentation proceeds in stainless-steel tanks at controlled temperature until the intended balance of alcohol and residual sugar is reached.
Ageing
The wine matures for approximately six months in French oak. The main description identifies the vessels as second-use barriques, while the technical sheet refers more generally to French oak casks.
