Vineyard and terroir
The grapes come from southeast- and southwest-facing slopes with stony, limestone-rich soils. The vines are 25–35 years old and produce low yields.
Vinification
Fully ripe grapes are harvested from late September to early October, with each variety vinified separately. Fermentation is followed by malolactic fermentation, except for Sauvignon Blanc.
Ageing
The separate wines rest on their lees for 12 months in oak barriques and tonneaux. After blending, the cuvée matures for at least 36 months in stainless-steel vats.
Tasting profile
Complex and elegant, with notes of ripe fruit and minerals. It has a mineral character, pleasant acidity and excellent balance.
Serving and pairing
Decant for one hour before serving.
Vintage notes
The 2016 growing season provided ideal ripening conditions, particularly during a “golden September.” The vintage was expected to show its full character from 2021 to 2032.

Chief winemaker Hans Terzer developed the idea for Appius over many years as his dream wine.
