Vineyard and terroir
The grapes grow in the "Schulthaus" vineyard in Appiano, at 540–620 m above sea level, above Moos Castle. The vines are between 10 and 40 years old.
Vinification
The grapes are harvested by hand in early October and sorted by hand. 80% of the must is fermented and aged in stainless steel tanks; the remainder is vinified in large oak casks. The wine is blended in February of the following year.
Vintage notes
2021 was a challenging year in Trentino-Alto Adige. The winter months were mostly sunny but very cold. Temperatures rose only briefly and occasionally in spring, which slowed the vines' development. A warm, sunny start to summer made up for the delay in the growing cycle, although July and August brought unsettled weather. Harvest began relatively late. A rainy September tested growers, but the results were impressive.

"Schulthauser" was first bottled in 1982. The Pinot Bianco is also known as Weissburgunder.
