Vineyard and terroir
The grapes come from selected vineyards in Oltradige, at 350–600 metres above sea level. The sites face southwest and southeast, with moraine soils containing limestone and gravel. The vines are between 6 and 26 years old. The wind that blows across the San Michele Appiano estate gives the wines distinctive aromas and freshness.
Vinification
The grapes are harvested by hand in late September and early October and sorted by hand. Fermentation takes place in stainless-steel tanks.
Ageing
The wine ages for around 12 months in barriques, where malolactic fermentation also takes place. Before bottling it completes its maturation in cement tanks. In total it spends at least two years in the cellar.
