Vineyard and terroir
The fruit comes exclusively from Stella di Campalto's own vineyards at San Giuseppe in Montalcino. The estate treats each vineyard as an individual cru, harvesting and vinifying its parcels separately. Vineyard work and harvest timing are decided parcel by parcel rather than through a standardized recipe.
Grapes
100% Sangiovese from the 2013 vintage. The estate produces pure-varietal wines and bottles each wine entirely from the vintage declared on its label.
Vinification
The grapes are picked by hand into small crates. The three-level winery enables gravity-fed handling: after destemming, the fruit falls into 30-quintal wooden vats. Individual parcels are vinified separately. Apart from minimal sulfur dioxide, nothing is added before, during or after the bunches enter the cellar.
Ageing
The 2013 Riserva spent 45 months in wood, followed by at least 32 months in bottle. The underground ageing room lies 14 m below the surface and remains naturally cool and constant in temperature. The estate generally favors small wooden barrels made with thick staves. Bottles are filled individually by gravity and kept in a temperature-controlled environment until the desired maturation is reached.
