Vineyard and terroir
The Garganega comes from an approximately one-hectare parcel within the Fittà U.G.A. The vineyard faces due south at about 260 metres and has a pronounced 45% gradient. Its soil is volcanic in origin, with a clay-silt texture. The dialect word rive denotes particularly steep, rugged ground and supplies the wine’s name.
Grapes
100% Garganega, harvested at an overripe stage.
Vinification
The fruit is picked by hand into crates at the end of October. Alcoholic fermentation takes place in 25-hL large French-oak barrels over 20 days at 15–18 °C. Malolactic fermentation occurs spontaneously in the large barrels. Before bottling, the wine receives a single membrane filtration.
Ageing
The wine matures for 15 months in large oak barrels on its fine lees without racking, followed by 12 months in bottle.
Technical data
Alcohol: 13.50% vol.
Tasting profile
Intense yellow with golden highlights. The aroma combines ripe yellow fruit, candied citrus and sweet spices with marine and smoky nuances. The palate is broad, full-bodied and elegant, with exceptionally long savoury and mineral persistence.
Serving and pairing
Serve at 13–14 °C. Its intensity suits roast white meat, raw meat and spicy ethnic cuisines, as well as fatty fish and mature cheeses. It also complements dishes that unite savoury flavours with a touch of sweetness.
Label / history
First produced in 1992. Its name derives from the local term rive, used for especially steep terrain.
