Vineyard and terroir
The grapes come from vineyards distributed across various hillsides in the northern part of the Soave Classico area. Exposures vary, while the average elevation is approximately 300 m. The soils are volcanic in origin and have varied textures. The Garganega vines average at least 40 years of age.
Grapes
100% Garganega.
Vinification
The grapes are harvested manually from mid-September. Alcoholic fermentation takes place in steel for 14 days at 15–18 °C. Depending on the vintage, part of the wine undergoes malolactic fermentation. Only one membrane filtration is performed before bottling.
Ageing
The wine matures for 5 months on its fine lees in steel tanks, followed by at least 1 month in bottle.
