Vineyard and terroir
The Monte Carbonare vineyard occupies 6 ha within the Carbonare U.G.A. It lies at 280 m and faces north-east and north-west. Its deep volcanic soils have a clay texture and contain very dark black basalt. Their coal-like color is presented as the probable origin of the Carbonare place-name. Garganega vines trained to the traditional pergola veronese system average approximately 60 years of age.
Grapes
100% Garganega.
Vinification
Harvesting is manual and takes place at the beginning of October. Alcoholic fermentation proceeds in steel for 16 days at 14–16 °C. Malolactic fermentation is not performed. The wine receives only one membrane filtration before bottling.
Ageing
The wine remains on its fine lees in steel tanks for 12 months, followed by 6 months in bottle.
Technical data
Soave Classico DOC from the Carbonare U.G.A. Alcohol: 12.50% vol. First produced in 1986.
Tasting profile
Bright straw yellow. The nose is smoky and sulphurous, combining flint with citrus and wildflowers. Creamy and elegant on the palate, with pronounced freshness and savoriness, it finishes dry and very persistent.
Serving and pairing
Serve at 11–13 °C. Pair with fish, flavorful white meats, vegetable risottos, truffles and medium-aged cheeses.
Label / history
The wine is presented as a direct expression of the vineyard’s black volcanic earth, with a forthright personality and sharply mineral character. The name Carbonare is associated with the coal-like darkness of its basaltic soils.
