Vineyard and terroir
The fruit comes from hillside plots in Soave, in the municipality of Monteforte d'Alpone. The vines are 20 years old.
Vinification
Harvest takes place from late August to early September. After pressing, the wine undergoes alcoholic fermentation and six days of maceration at 18–20 °C, followed by malolactic fermentation.
Ageing
The wine is stabilized in steel tanks, then aged in bottle, with the process lasting a total of two months.
Label / history
The name Soave derives from “Svevi” or “Suavi,” meaning “Swabians.” Led by the Lombard king Alboin, the Swabians attempted to conquer Italy in 568; their name was adopted first by the town and later by the wine.
