Vineyard and terroir

Disueri is produced from Nero d’Avola vineyards at Tenuta San Giacomo in Butera. The south-facing hillside site lies at 400 m above sea level and is planted at 5,000 vines per hectare. Strong sunlight promotes ripening, while calcareous soil rich in white trubi contributes to the wine’s poised, approachable character. Yield is 60 hl/ha.

Grapes

100% Nero d’Avola.

Vinification

The grapes are harvested manually into crates during the first ten days of September. After destemming, the skins undergo a one-day cold maceration at 12°C. Fermentation follows at 28°C, with frequent pump-overs and punch-downs. Malolactic fermentation takes place in stainless steel.

Ageing

The wine remains on its fine lees in stainless steel for at least five months, followed by further bottle maturation.
