Vineyard and terroir
Sàgana comes from the historic Vigneto del Torrone Bianco at Tenuta San Giacomo in Butera. The name refers to soil as white as Sicilian nougat. The south-facing hillside vineyard lies at 400 m above sea level, with 5,000 vines per hectare and an average vine age of 30 years. Its calcareous ground is rich in white trubi. The combination of altitude and soil moderates Nero d’Avola’s natural power, helping the fruit retain freshness and acidity. Yield is 50 hl/ha.

100% Nero d’Avola.
Vinification
The fruit is harvested manually into crates during the first ten days of September. After destemming, maceration and fermentation proceed at a controlled 28–30°C for 10–15 days. Malolactic fermentation takes place in 20 hl casks.
Ageing
The wine matures for 18 months in the same 20 hl casks, followed by further bottle ageing.

The style combines Mediterranean depth and the natural power of Nero d’Avola with elegance and freshness. Preserved acidity gives balance and supports longevity.
