Vineyard and terroir
The estate lies in Pescantina, adjoining Sant’Ambrogio in the Valpolicella Classica area, at 140 m above sea level. The wine’s product information describes shallow calcareous soil with skeletal material and vines trained to Pergola Veronese and Guyot, with a north/east–south exposure. More generally, the estate describes its vineyards as south-facing, with gravelly skeletal material over limestone bedrock. The calcareous ground retains moisture for release during dry periods, while ventilation from the Prealps contributes to a mild, dry climate. The estate has been certified organic by BIOS since 1999.
Grapes
Corvina, Corvinone and Rondinella.
Vinification
The grapes are harvested manually and late, then crushed and cold-macerated for five days with spontaneous fermentation. After racking, the wine remains in a steel tank until the ripasso stage. At the end of January it spends one week in contact with Amarone pomace from the same vintage.
Ageing
Maturation follows in Slavonian oak casks and French oak barriques.
Tasting profile
Bright red. The intense bouquet evokes ripe cherry and blackberry, with light chocolate and vanilla notes. The palate is approachable, with juicy cherry, fine tannins and a long, persistent finish.
Serving and pairing
Serve at 14–16°C. Pair with savoury first courses, boiled meats, red meats, and mature cheeses such as Monte Veronese mezzano.
