Vineyard and terroir
The estate vineyards lie in Pescantina, adjoining Sant’Ambrogio in the Valpolicella Classica area, at 140 m above sea level. The well-drained ground has gravelly skeletal material over limestone bedrock. Its calcareous texture retains moisture and releases it during dry periods. The mild, dry climate is moderated by ventilation from the nearby Prealps. The vineyards face south and have been certified organic by BIOS since 1999.
Grapes
Corvina, Corvinone and Rondinella.
Vinification
The manually harvested grapes are destemmed and crushed. Fermentation takes place at a controlled 24–26°C, with 6–8 days of skin maceration. After several rackings, the wine remains in steel.
Tasting profile
Lively ruby in colour and showing good consistency. The nose combines cherry with fresh violet. The palate is balanced, soft and persistent, ending with a pleasant sweet-fruit aftertaste.
Serving and pairing
Serve at 14–16°C.
