Vineyard and terroir
The estate vineyards lie in Pescantina, adjoining Sant’Ambrogio in the Valpolicella Classica area, at 140 m above sea level. The product information describes shallow calcareous soil containing skeletal material and vines trained to Pergola Veronese and Guyot, with a north/east–south exposure. At estate level, the vineyards are described as south-facing, with gravelly skeletal material over limestone bedrock. The limestone-derived soil retains moisture and releases it during dry periods. Ventilation from the nearby Prealps helps maintain a mild, dry climate. The estate has been certified organic by BIOS since 1999.
Grapes
50% Corvina, 20% Corvinone, 15% Rondinella and 15% other red grapes.
Vinification
The grapes are harvested manually into 5 kg crates and dried for three to four months. Following destemming and crushing, fermentation proceeds at a controlled 26°C with approximately 20–30 days of maceration.
Ageing
The wine matures for three years, divided among 40 hl oak casks, 500 L tonneaux and 225 L barriques.
Tasting profile
Very intense ruby, while retaining good transparency, with a notably substantial appearance. The ethereal bouquet combines ripe fruit—especially morello cherry—with balanced impressions of toasted wood and cocoa. Full, harmonious and long on the palate, it shows pronounced softness and balance, followed by an aftertaste of morello cherries in spirit.
Serving and pairing
Serve at 16–18°C. Its structured, austere character suits game, braised dishes, rare red meats and mature cheeses.
