Vineyard and terroir
The fruit comes from Tenuta Vignega in Pescantina, near Sant’Ambrogio di Valpolicella. The hillside vineyards lie at approximately 140 m above sea level. Their shallow calcareous soils contain abundant stones over a gravelly limestone substrate, promoting good drainage while retaining moisture for dry periods. The wine page gives the exposure as north/east to south and identifies Pergola Veronese and Guyot training; the estate profile describes the vineyards collectively as south-facing and Guyot-trained. The estate has followed certified organic farming since 1999.
Grapes
50% Corvina, 20% Corvinone, 15% Rondinella and 15% other red grapes.
Vinification
The grapes are harvested by hand into 5 kg crates and dried for 3–4 months. After destemming and crushing, fermentation proceeds at a controlled 26°C with approximately 20–30 days of maceration.
Ageing
The wine matures for three years, divided among 40 hl oak casks, 500 L tonneaux and 225 L barriques.
Tasting profile
Very intense yet transparent ruby, with notable visual concentration. The ethereal bouquet combines ripe fruit—especially morello cherry—with balanced notes of toasted wood and cocoa. Full, harmonious and long on the palate, it shows pronounced softness and balance, followed by an aftertaste of morello cherries preserved in alcohol.
Serving and pairing
Serve at 16–18°C. Its structured, austere character suits game, braised dishes, rare red meat and mature cheeses.
