Vineyard and terroir

The grapes grow in the municipalities of Fosdinovo and Castelnuovo at 70 metres above sea level. The vineyards have sandy loam soils rich in pebbles.

Vinification

The grapes are harvested by hand in September in two passes, timed to the ripeness reached in each plot. On arrival at the winery, they are protected with inerting systems until pressing. A long pressing cycle is followed by cold static settling and temperature-controlled fermentation in steel tanks.

Ageing

The wine remains on its fine lees for four months. It is bottled in February with minimal added sulfur and rests for several more weeks in the winery’s cellars.
