Vineyard and terroir
Nebbiolo grown in municipalities of the Langhe within the denomination’s production specification. The vineyards have calcareous-clay soils and are trained on vertical trellises with Guyot pruning. The maximum yield is 9 tonnes per hectare. Grapes are harvested entirely by hand in October.

100% Nebbiolo.
Vinification
The grapes are destemmed and crushed, followed by alcoholic fermentation and 6–8 days of skin contact at 26–28°C. Frequent pumping over is used during maceration. Malolactic fermentation is complete.
Ageing
The wine remains in tank for eight months before bottling.
Technical data
Minimum alcohol: 14% vol.
Tasting profile
Ruby red. Aromas combine small red fruits with spicy notes. The palate is dry and harmonious, with elegance and good structure.
Serving and pairing
Serve at 18–20°C. Pair with tagliatelle dressed with meat ragù or porcini mushrooms, grilled or otherwise prepared white and red meats, game, and flavourful medium-mature cheeses. It can mature for 3–5 years in bottle.
