Vineyard and terroir

The grapes are grown in Alba, Albaretto della Torre, Barolo, Castiglione Falletto, Cherasco, Grinzane Cavour, La Morra, Monforte d’Alba, Montelupo Albese, Novello, Serralunga d’Alba, Verduno, Roddi and Roddino. The vineyards have calcareous-clay and calcareous-siliceous soils. Vines are trained on vertical trellises with Guyot pruning. Maximum yield is 9 tonnes per hectare.

Grapes

100% Dolcetto.

Vinification

Harvest is entirely manual and takes place in mid-to-late September. After destemming and crushing, alcoholic fermentation proceeds at a controlled 24–26°C, accompanied by frequent pumping over and 4–6 days of maceration. Malolactic fermentation is completed.

Ageing

The wine spends 3–4 months in tanks before bottling.

Technical data

Alcohol is 13.5% vol.; the technical specification gives a minimum of 11.5% vol. Minimum total acidity is 4.5 g/L, and minimum net dry extract is 21 g/L.

Tasting profile

Ruby red with violet highlights. The nose is fresh and fruit-driven. Dry and harmonious on the palate, it closes with a pleasant almond-like aftertaste.

Serving and pairing

Serve at 16–18°C with simple starters, pasta, risotto or everyday dishes. It is best drunk young, within a couple of years of the vintage. Store bottles horizontally in cool, dry and dark surroundings at a constant temperature.
