Vineyard and terroir

Desiata comes from 24 ha at Torrececcona di Todi, at 350 m above sea level. The medium-textured soils are clay-rich. The vines are 14 years old, trained to spurred cordon and Guyot, and planted at 3,300–4,000 vines/ha. Yield is 120 q/ha.

Grapes

Grechetto and other white grape varieties authorised in Umbria.

Vinification

Harvest takes place in mid-September. The grapes are picked during the coolest early-morning hours and chilled on arrival to limit oxidation and prevent unwanted fermentation. White vinification begins with gentle pressing in an oxygen-free environment. The must is clarified by static settling for 24 hours, then inoculated with selected yeasts and fermented at controlled temperature in stainless steel. Malolactic fermentation is not carried out.

Ageing

Maturation on the lees in stainless steel is followed by two months in bottle.

Umbria IGT Bianco. Alcohol: 12% vol. Production: 250,000 bottles. Format: 750 mL.

Tasting profile

Pale straw yellow. The vinous bouquet combines white flowers, citrus and yellow peach. Pronounced freshness and savouriness are supported by good structure, leading to a moderately long finish.

Serving and pairing

Serve at 10 °C as an aperitif or with pasta dishes with cheese, fish, fresh cheeses and poultry.

Vintage notes

A seasonally typical winter was followed by abundant spring rainfall and lower temperatures, prolonging the vines’ vegetative recovery. A generally hot summer, including heat above seasonal averages, restored vegetative development. Late-summer rainfall replenished soil water reserves and helped rebalance fruit ripening.
