Vineyard and terroir
The fruit comes from 22 hectares at La Palombara in Gualdo Cattaneo, at 300–350 metres above sea level. The gently sloping vineyard faces south, and its clay-rich soil contains lignite. The 18-year-old vines are trained to spur-pruned cordon at a density of 3,300 plants per hectare. Yield is 70 quintals per hectare.
Grapes
100% Sagrantino.
Vinification
Before the 2019 harvest, less-ripe and unhealthy bunches were thinned out. In the cellar, the grapes were destemmed and lightly crushed without tearing the skins. Fermentation was initiated with selected yeasts in cooled stainless-steel fermenters fitted with automated pump-over systems. Pump-overs began once sufficient alcohol had formed to extract tannins and help stabilize the colouring matter. Alcoholic fermentation lasted approximately 8–10 days. After separation from the skins, malolactic fermentation proceeded in temperature-controlled stainless steel.
Ageing
Matured for 12 months in barriques and large oak casks, followed by four months in bottle.
Technical data
2019 vintage. Alcohol: 15% vol. Production: 50,000 bottles. Bottle format: 750 ml.
Tasting profile
Very intense ruby red with garnet reflections. The complex, assertive bouquet recalls plum preserve, peaches in syrup and spices. Powerful and persistent on the palate, with substantial body and structure, warmth, softness and well-polymerized tannins.
Serving and pairing
Serve at 20 °C after opening in advance and carefully decanting into a carafe. Pair with succulent dishes, fatty meats and braised meats. Capable of ageing for 15–20 years.
Vintage notes
The 2019 winter followed normal seasonal patterns, while abundant spring rainfall lowered temperatures and prolonged the resumption of vegetative growth. A hot, dry summer with above-average heat peaks allowed the vines to recover their development. Late-summer rain replenished soil water reserves and restored balance to fruit maturation.
