Vineyard and terroir
The grapes come from a 3 ha vineyard at Torrececcona di Todi, situated at 350 m above sea level on medium-textured soil. The 15-year-old vines are trained to spurred cordon and planted at a density of 4,500 vines/ha. Yield is 120 q/ha.

Vinification
The fruit is harvested in late August during the coolest early-morning hours and chilled with dry ice upon arrival at the winery. After gentle pressing, the must undergoes 24 hours of static settling. Selected yeasts conduct the base-wine fermentation in stainless steel at 13–14 °C. The prise de mousse takes place in closed pressure tanks at 14–18 °C, with periodic remuage. Malolactic fermentation is not carried out.
Ageing
At least six months on the lees in pressure tanks.

Vino Spumante di Qualità. Alcohol: 12.5% vol. Production: 20,000 bottles.
Tasting profile
Straw yellow with greenish reflections and an intense, persistent stream of fine bubbles. Yellow fruit and citrus aromas are complemented by light suggestions of bread crust and pine needles. The palate opens with vivid freshness supported by ripe fruit and closes with long minerality.
Serving and pairing
Serve at 6 °C as an aperitif or with raw seafood.
Vintage notes
Seasonal winter conditions were followed by abundant spring rainfall and lower temperatures, delaying vegetative recovery. A generally hot summer, including temperatures above seasonal averages, allowed the vines to regain development. Late-summer rain replenished soil water reserves and helped rebalance fruit ripening. The grapes were harvested in excellent health.
