Vineyard and terroir

The grapes come from 10 ha of vineyards distributed across Torrececcona di Todi, Gualdo Cattaneo and Montefalco, at elevations of 250–400 m above sea level. The vines are 12–20 years old and grow in clay and medium-textured soils. They are trained to spurred cordon at a density of 5,000 vines per hectare, with a yield of 100 q/ha. Harvest normally takes place from mid- to late September.

Grapes

Sangiovese, Merlot and other red grape varieties authorized in Umbria.

Vinification

The grapes are destemmed and crushed, then inoculated with selected yeasts in temperature-controlled stainless-steel fermenters equipped with automated pump-over systems. Alcoholic fermentation lasts approximately ten days with délestage and/or pump-overs. Malolactic fermentation takes place in stainless steel.

Ageing

Maturation takes place in stainless steel, followed by ageing in bottle.

Tasting profile

Ruby red with purple reflections. Floral aromas lead into pronounced red-berry fruit. The palate shows vinous sensations alongside red fruit and red flowers. Medium-bodied and tannic, it closes with a mineral finish.

Serving and pairing

Serve at 18°C or room temperature. Pair with meat-based first courses, red meat and roasts.

Vintage notes

The 2021 crop was smaller than average. An initially dry period was followed by beneficial September rain, which helped the grapes—particularly the red varieties—during the final two weeks before harvest. Yields were modest, but the berries were concentrated. Harvest began approximately six to seven days earlier than in recent vintages, although the advance was less marked in the cooler, higher vineyards toward Todi. Merlot was particularly successful, while Sangiovese and the other red grapes achieved very good sugar and phenolic ripeness. Fruit arriving at the cellar remained in very good sanitary condition.
