Vineyard and terroir

The 24 ha vineyard is located at Torrececcona di Todi at 350 m above sea level. Its medium-textured soil is clay-rich. The vines are 14 years old, trained to spurred cordon and Guyot, and planted at a density of 3,300–4,000 vines per hectare. Yield is 120 q/ha.

Grapes

Grechetto with other white grape varieties authorised in Umbria; the proportions are not specified.

Vinification

The grapes are harvested in mid-September during the coolest early-morning hours and chilled on arrival at the winery to prevent oxidation and unwanted fermentation. White vinification includes gentle pressing in an oxygen-free environment and 24 hours of static settling to clarify the must. Selected yeasts are then inoculated, and alcoholic fermentation proceeds at controlled temperature in stainless steel. Malolactic fermentation is not carried out.

Ageing

Maturation on the lees in stainless-steel tanks is followed by two months in bottle.

Alcohol: 12% vol. Production: 250,000 bottles. Bottle format: 750 ml.

Tasting profile

Pale straw yellow. The nose combines vinous notes with white flowers, citrus and yellow peach. The palate is notably fresh and savoury, with good structure and a moderately long finish.

Serving and pairing

Serve at 10°C as an aperitif or with pasta dishes with cheese, fish, fresh cheeses and poultry.

Vintage notes

Winter followed the seasonal norm, while abundant spring rain lowered temperatures and prolonged the vines’ return to active growth. A generally hot summer, with temperatures above seasonal averages, allowed vegetative development to recover. Late-summer rainfall replenished soil moisture and helped restore balance to fruit ripening.
