Vineyard and terroir
The 37 ha of vineyards are distributed across Torrececcona di Todi, Gualdo Cattaneo and Montefalco at 400 m above sea level. The medium-textured soils are clay-rich. The vines average 16 years of age, are trained to spur-pruned cordon and planted at 5,000 vines per hectare. Yield is 120 q/ha, with harvest in mid-September.
Seasonal winter conditions were followed by abundant spring rainfall and cooler temperatures, prolonging the vines’ vegetative recovery. A generally hot summer, including temperatures above the seasonal average, allowed vine development to recover. Late-summer rain replenished the soil’s water reserves and restored balance to fruit ripening.
Grapes
Sangiovese, Merlot and other red grape varieties authorized in Umbria.
Vinification
The grapes are destemmed and crushed, then inoculated with selected yeasts. Alcoholic fermentation lasts approximately one week in temperature-controlled stainless-steel vats equipped with automated pumping over and includes délestage. Controlled malolactic fermentation also takes place in stainless steel.
Ageing
Maturation in stainless steel is followed by bottle ageing.
