Vineyard and terroir

The fruit comes from organic vineyards in Trentino. The limestone soils contribute distinctive mineral notes. The cool climate features marked differences between daytime and nighttime temperatures, with cold winters and hot summers.

Vinification

The grapes are harvested by hand at optimal ripeness. After crushing and destemming, they are gently pressed and undergo a short cold maceration at low temperature. Fermentation takes place in temperature-controlled stainless-steel tanks.
