Vineyard and terroir
The fruit is grown in vineyards in the Trento region, on mainly limestone soils. The cool climate features pronounced day–night temperature differences, cold winters and hot summers.
Vinification
The grapes are harvested by hand at optimal ripeness. After crushing and destemming, they are gently pressed and undergo a short cold maceration. Fermentation takes place in temperature-controlled stainless-steel tanks and continues until the following spring. Secondary fermentation with yeast occurs in the bottle for 36 months.
