Vineyard and terroir
The Cabernet Sauvignon comes from the San Giovanni vineyard in the Castelnuovo Berardenga area of Tuscany. The sandy tufa soil contains a small proportion of stones. Planting was completed in spring 2002 at 11,000 vines per hectare, and yield is 60 quintals per hectare. The estate is certified organic and carbon neutral.

100% Cabernet Sauvignon.
Vinification
The grapes are selected first in the vineyard during harvest and again by optical sorting at the winery. After destemming, intact berries are transferred immediately to French oak fermenters. Alcoholic fermentation is temperature-controlled, and skin contact lasts approximately 30 days.
Ageing
Maturation lasts 24 months in barriques: 70% new and 30% one-year-old. Six months of this period are spent on the fine lees.
Tasting profile
Deep ruby red. Green pepper, licorice and graphite aromas mingle with oak-derived vanilla. The palate is full-bodied and driven by ripe fruit, with rounded tannins and the capacity for extended ageing.
Label / history
LEGIT was conceived as a varietal expression of the San Giovanni vineyard's Cabernet Sauvignon. Lia Tolaini-Banville developed the name after tasting the 2013 wine from barrel in 2016. The label honors jazz musician Thelonious Monk and uses a photograph from the cover of an album recorded at his 1963 Milan concert. Wine Spectator placed the 2013 vintage at No. 26 and the 2016 at No. 13 in its respective Top 100 lists.
