Vineyard and terroir
The Cabernet Franc grows in Castelnuovo Berardenga within Chianti Classico, in lime-and-clay soil containing abundant gravel-sized stones. The vineyard was planted in 2000 at 6,900 vines per hectare and yields 5 tonnes per hectare. During summer, the finest vines are identified and followed individually throughout ripening. Production is limited to 600 bottles. The estate is certified organic and carbon neutral.
Grapes
100% Cabernet Franc.
Vinification
Selection takes place during harvest in the vineyard and again at the winery with an optical sorter. The bunches are destemmed, and the intact berries go directly into open-top French oak barrels, all of them new. Fermentation uses natural yeasts, with gentle manual punch-downs and 30 days of skin contact.
Ageing
The wine matures for 24 months in 100% new French oak barriques, including six months on the fine lees. It then rests in bottle for a further 24 months before release.
Tasting profile
Deep ruby red. Aromas evoke red tomato, green pepper and melted chocolate, with restrained oak and vanilla. The full-bodied palate combines ripe fruit with a fresh, long backbone. The wine is structured to develop for decades.
Label / history
PERLUI is dedicated to Pier Luigi “Louie” Tolaini, founder of the estate. Cabernet Franc was his favorite grape, and this wine was created as the realization of his ambition to express the estate's terroir at its highest level.
