Vineyard and terroir
Fruit is selected from Tommasi-owned vineyards in the hilly Valpolicella zone.
Grapes
Corvina Veronese, Rondinella and Molinara; proportions are not specified.
Vinification
Fermentation takes place in stainless-steel vats for approximately 12 days. The wine is then refermented for about eight days on the pomace from Amarone, with daily pumping over. This traditional passage over Amarone pomace builds additional aromatic complexity and body.
Ageing
The wine matures for 12 months in 65 hl Slavonian oak casks.

Alcohol: 13.5% vol. Bottle size: 750 ml.
Tasting profile
Deep ruby red. The nose offers ripe cherry and plum, followed by lightly floral, ethereal and spicy nuances. The palate is full-bodied, mellow and structured, with soft tannins supporting the fruit. A savoury, persistent finish is joined by a suggestion of cherry preserve.
Serving and pairing
Serve at 16–18°C according to the product page. Pair with white or red meats, mature cheeses and delicate game.
Label / history
Strict grape selection and the traditional Ripasso method define the wine. Tommasi was sufficiently proud of its first Ripasso to become the first family to display the term on the label.
