Vineyard and terroir
The grapes come from selected vineyards in the rolling hills of Valpolicella Classica. The product page identifies the crus Conca d’Oro and La Groletta, while the English technical sheet names Conca d’Oro and Tenuta Prunea.
La Groletta benefits from abundant sunlight and the constant breeze from Lake Garda. Its microclimate encourages the development of aromatic precursors associated with pronounced fruit and darker spice notes. Conca d’Oro has stony, actively calcareous soils. The limestone contributes aromatic definition, finesse and elegance, including clean, fragrant floral sensations, while supporting structure, complexity and the capacity to improve in bottle.
Integrated production methods are used for environmentally responsible vineyard management.
Grapes
70% Corvina, 25% Rondinella and 5% Corvinone.
Vinification
A selected Valpolicella base wine ferments in stainless-steel vats for approximately 15 days. It then undergoes a second fermentation for 12–13 days in contact with Amarone pomace. This ripasso step increases aromatic intensity, body and complexity.
Ageing
The wine matures for at least 18 months in 65 hl Slavonian oak casks, followed by 6 months in bottle.

No animal-derived products or allergen-containing materials are used during production. Winery resources are managed to reduce waste and encourage recycling. The closure uses FSC-certified organic material, the label is printed on FSC-certified paper, and the carton is made from recycled paper.
Tasting profile
Deep, bright ruby red. The nose is rich and intensely spicy, combining ripe cherry jam with tobacco and black pepper. The palate is elegant and full-bodied, with soft, silky tannins and a very long finish.
Serving and pairing
Serve at 16–18°C. Pair with boiled or braised meats, grilled red meats and other robust meat-based dishes.
Label / history
Ripasso is comparatively recent among Valpolicella wines, although its method developed from sharecropping traditions that differed from family to family. The wine is created by refermenting a selected Valpolicella on Amarone pomace, linking its production directly to one of Valpolicella Classica’s traditional appassimento wines.
