Vineyard and terroir
The wine comes from the Masseria Maìme estate in Alto Salento, where the vineyards slope down from shady pine groves to the coast. Constant Adriatic breezes soften the southern heat, so the Negroamaro grapes ripen slowly and keep their natural freshness and juiciness.
Vinification
The grapes are destemmed and pressed after harvest. Fermentation takes place in stainless steel tanks at no more than 26 °C, to preserve the delicate aromas. Maceration on the skins lasts 10 days, giving deep colour and soft texture. Malolactic fermentation is completed by winter.
Ageing
The wine ages for 10 months in stainless steel tanks, which keeps it bright and fruity.
Tasting profile
Deep colour, soft texture, bright and fruity, with freshness and juiciness.
Serving and pairing
Suited to an aperitif or a dinner on the terrace.
