Vineyard and terroir
The fruit comes from Tormaresca's estates in Puglia. The climate is warm and Mediterranean, with sea breezes and a marked contrast between daytime and nighttime temperatures. These conditions help the grapes keep their acidity, which gives the wine better balance and makes it easy to pair with food.
Vinification
After harvest the grapes are gently destemmed and carefully pressed to preserve their clean aromas. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of around 26 °C and lasts 8–10 days, which helps retain the bright fruit and soft texture. Malolactic fermentation is completed by the beginning of winter, softening the acidity.
Ageing
The wine spends around 8 months in stainless steel tanks, which preserves freshness and varietal character. It then rests 4 months in bottle before release, which maintains freshness and brings the wine together.
Tasting profile
Juicy and soft, with bright fruit and gentle spice. The malolactic fermentation gives a velvety feel. Primitivo is described as producing full-bodied wines with rich aromas of ripe berries, combining power with softness. The wine is lively, easy to drink and elegant, with good balance.
Serving and pairing
Pairs with pizza and grilled meat.
