Vineyard and terroir
The Ciliegiolo comes from Tornesi’s highest vineyard area in Montalcino, at approximately 610 m above sea level. The southeast-facing site has stony, marl-rich soil with abundant skeletal material. The vines are trained as balanced unilateral spurred cordons, with a planting density of 4,600 vines per hectare and a yield of 60–70 quintals per hectare.
Grapes
100% Ciliegiolo.
Vinification
The grapes are harvested in October. Fermentation begins spontaneously, without the addition of cultured yeasts. Intensive pump-overs are carried out during the initial phase, while the temperature is maintained below 30°C. The wine undergoes a medium-length maceration on the skins.
Ageing
Maturation takes place in stainless steel and barrel, followed by a period in bottle.
