Questo vino
Vineyard and terroir
The grapes come from two areas southeast and southwest of Montalcino, Tuscany. The soils are stony marl with abundant skeletal material. Vines are trained to a balanced unilateral spurred cordon at a density of 4,600 vines per hectare. Yield is 60–70 quintals per hectare, and harvest takes place between September and October.
Grapes
100% Sangiovese. The Riserva is made from the best grapes and only in the finest vintages.
Vinification
Fermentation begins spontaneously without the addition of selected yeasts. It takes place in 50 hl oak vessels, with intensive pumping over during the initial phase and temperature controlled to a maximum of 30°C. The wine undergoes a long maceration on the skins.
Ageing
The wine matures for 36 months in Slavonian oak barrels ranging from 7 to 30 hl. The Riserva is released six years after the harvest.
