Vineyard and terroir
The fruit is grown at 140–250 m in the Illasi area of Valpolicella, east of Verona. The ancient geological formation provides good drainage, while southern exposure brings plentiful sunshine. Balanced temperatures and air currents descending from the Lessini range benefit both the vines and the appassimento process. The climate is fairly mild, with warm winters, hot summers and average annual rainfall of 750–850 l/m². The soils have limited moisture retention where clay content is low. The estate’s vineyards have been farmed organically for 20 years.
Grapes
Corvina and Corvinone form the main part of the blend, with small amounts of Rondinella, Oseleta and Croatina.
Vinification
The best bunches are selected and harvested from the second half of September to the end of October. They dry until the following January in specially equipped lofts with constant humidity monitoring, losing an average of 50% of their weight. After drying, the grapes are destemmed and pressed. Fermentation proceeds slowly for about 40 days in temperature-controlled stainless-steel tanks with specially selected yeasts, extracting colour, tannins and aromatic character.
Ageing
The wine matures for two years in French oak barrels.
