Vineyard and terroir
The Pignoletto comes from Podere Casetta, with north-west exposure. The wine page identifies clay soil, while the technical sheet refines this to clay that is partly stony. The vines average 15 years of age and yield 100 quintals per hectare (10 t/ha).
Grapes
100% Pignoletto.
Vinification
The grapes are gently pressed and fermented at a controlled 16 °C. Secondary fermentation takes place in an autoclave at 15–16 °C using selected yeast strains.
Ageing
A brief period on the lees follows secondary fermentation.
Technical data
Pignoletto DOC Frizzante. Alcohol: 12% vol. The wine page offers 0.375 L and 0.75 L formats, while the technical sheet lists only 0.75 L.
Tasting profile
Straw yellow with greenish highlights. The bouquet brings together fruit and flowers, ending with a basil nuance. Fresh and pleasantly untamed on the palate, with almond and citrus notes.
Serving and pairing
Serve at 8–10 °C. Suitable as an aperitif or throughout a meal.
