Vineyard and terroir
Umberto is associated with Podere Liano, whose vineyards face south and south-east. The soil is medium-textured, clayey and calcareous. The vines average six years of age, with a stated yield of 80 q/ha (8 t/ha).
Grapes
100% Merlese, a grape combining characteristics associated with Merlot and Sangiovese.
Vinification
Fermentation takes place under temperature control in concrete vats and cocciopesto amphorae.
Ageing
Maturation continues in concrete vats and cocciopesto amphorae, followed by six months in bottle.
Technical data
Alcohol: 14.5% vol. The wine page offers 750 ml and 1.5 L bottles, while the technical sheet lists only 750 ml.
Tasting profile
Deep red with violet reflections. The broad bouquet layers cherry and woodland berries with spicy nuances. Full-bodied yet elegant, the palate balances acidity with softness and carries a firm but consistently pleasant tannic texture.
Serving and pairing
Serve at 16–18°C. Pair with cured-meat starters, grilled meats or first courses accompanied by meat.
Label / history
This was the final project personally championed and followed by founder Umberto Cesari. The label was dedicated to him, giving the wine its name.
