Vineyard and terroir
Costa di Rose is associated with Podere Parolino. Its vineyard exposures run north to north-west and east to south-east, and the soils are clayey and partly stony. The vines average ten years of age, with a stated yield of 100 q/ha (10 t/ha).
Grapes
100% Sangiovese. The current published vintage is 2025.
Vinification
The rosé is made by direct gentle pressing, followed by rigorous static settling and fermentation at low temperature.
Ageing
Six months in stainless-steel tanks.
Technical data
Alcohol: 12.5% vol. Available formats: 375 ml, 750 ml, 1.5 L, 3 L, 6 L and 9 L.
Tasting profile
Brilliant antique pink with silky reflections. Aromas of wild strawberry, raspberry, redcurrant, cherry and pomegranate lead into a closing poppy note. The palate is fresh and pleasantly savoury, with a persistent cherry finish.
Serving and pairing
Serve at 8–10°C as an aperitif or with fish-based starters, vegetable flans, fresh cheeses, moderately savoury first courses and mortadella.
