Vineyard and terroir

The wine is associated with Podere Parolino, whose vineyards occupy two sides of the same hill, with north/north-west and east/south-east exposures. The technical sheet specifies medium-textured clay soil, an average vine age of 15 years and a yield of 8 tonnes per hectare. The broader estate profile describes the podere's soil as clayey and partly stony.

The 2024 wine is 100% Trebbiano.

Vinification

The grapes undergo careful gentle pressing and static settling. Fermentation then takes place at controlled temperature in spherical concrete tanks and cocciopesto amphorae.

Ageing

The wine matures for six months in spherical concrete tanks and cocciopesto amphorae, followed by three months in bottle.

Tasting profile

The nose is intense, broad and pleasantly fruity, with characteristic notes of dried apricot and honey. The palate is savoury, mineral, fresh and harmonious, supported by clearly defined acidity.

Serve at 8–10 °C. Pair with delicate first courses or main courses based on white meat or fish.
