Vineyard and terroir
The Pignoletto comes from Podere Casetta, with north-west-facing vineyards. The wine page describes clay soil, while the technical sheet specifies clay and limestone. The vines average 15 years of age and yield 100 quintals per hectare (10 t/ha).
Grapes
100% Pignoletto.
Vinification
The grapes are gently pressed and fermented at a controlled 16 °C. The Pignoletto cuvée then undergoes secondary fermentation in an autoclave at 15 °C for approximately 30 days using the Charmat method.
Ageing
Approximately 120 days on the lees follow the secondary fermentation.
Technical data
Pignoletto DOC Spumante. Alcohol: 12% vol. The wine page offers 0.75 L and 1.5 L formats, whereas the technical sheet lists 0.75 L only.
Tasting profile
Light straw yellow with a fine, persistent perlage. The intense bouquet combines white flowers, jasmine and an elegant Golden Delicious apple note. The palate is slender, delicate and pleasantly fresh.
Serving and pairing
Serve at 6 °C. Suitable as an aperitif and with starters, light fish-based first courses, and fresh, creamy cheeses.
