Vineyard and terroir

Poggio al Granchio occupies 18.5 ha on the southeastern slope of Montalcino, at elevations of 380–450 m. This historic part of the appellation faces Monte Amiata, whose proximity affects the local climate, soils and day-to-night temperature range. The climate is warmer and more continental, balanced by pronounced diurnal variation.

The surrounding landscape is marked by oak and holm oak woodland and broom bushes. The vineyard lies on galestro schist. Planting density is 5,000 vines per hectare, with the vines trained to single spurred cordon.

Vinification

The vineyard is divided into micro-areas for harvesting. Grapes are picked by hand into crates, destemmed, optically selected and lightly crushed. Fermentation takes place over 10–14 days at 20–28°C, using gentle extraction and délestage. A post-fermentation maceration follows for 20–25 days at 30°C.

Ageing

The wine matures in a dedicated cellar for 24 months in 60 hl French oak barrels, then spends 6 months in concrete and a further 9–12 months maturing in bottle.

Tasting profile

Dark ruby red with purplish highlights. The aromatic profile combines cherry, redcurrant, blackberry and myrtle with peach leaf, iron, flint and blood-rich meat nuances. It is succulent, dense and spirited, with compact, angular tannins and a savoury, mineral finish.

Its development is reductive, with the blood-rich meat character becoming more prominent over time. The projected ageing potential is 25–30 years, with an ideal drinking window at approximately 15–18 years of age.

Serving and pairing

Pair with steak, wild boar, venison or slowly cooked meats.
