Vineyard and terroir
The vineyards lie around Ortona on Abruzzo’s Adriatic coast. They face west and south-west and are planted on medium-textured calcareous-clay soils, with the vines trained on pergolas.
Grapes
Pecorino. The variety has limited plantings—about 300 hectares across Abruzzo and Le Marche. Its name is traditionally associated with the resemblance between a grape bunch and a sheep’s head.
Vinification
The grapes are destemmed and crushed very gently, followed by approximately 12 hours of skin contact at 3°C. Around 80% of the must ferments in temperature-controlled stainless-steel tanks at 12°C, while the remaining 20% ferments in 40 hL oak barrels, contributing restrained oak character and added finesse.
Tasting profile
Bright, vivid straw yellow with golden highlights. The profile is fresh and mineral, with yellow flowers, peach and citrus. The palate is flavourful, full-bodied and mineral, finishing with a lightly bitter note.
Serving and pairing
Serve at 10–12°C. Pair with Pecorino cheese, lobster, cream of vegetable soup, smoked fish or roast quail.
